Alter Ego Altbier

This beer is the “alter ego” of most German style beers we drink which are pale cold fermented lagers. Altbier is a rich, fruity warm fermented brown ale. The word “Alt” simply means old and refers to the time before the rise of lager brewing when ales were the dominant brews of Germany.

This distinctive seasonal is brewed in the German lager style known as Schwarzbier. This beer originated as a warm fermented ale style in central Germany before cold fermenting lager yeasts were introduced. Though malty in flavor and dark in color, it is relatively light bodied and has a dry and refreshing finish. A select combination of the world’s finest caramel, pale and black malts give Winter Wonder its delicious roasted flavors and aromas, reminiscent of chocolate, coffee and dried fruit.
PHIL N. TOPEMOVE IMPERIAL STOUT

The people of St. Petersburg began enjoying Imperial Stout when it was brought to Russia from England in 1698. This beer quickly became the favorite drink of Catherine the Great. The English brewers made the beer strong so that it wouldn’t spoil or freeze on the journey across the Baltic Sea. Today, Carolina Brewery carries on the tradition of this rich brew by using only the best English roasted malts and plenty of Fuggle and Golding hops.

Wheatcrusher is brewed in the style of a German Weizenbock and made with a rich mixture of wheat, pale and roasted malts. This ale is both strong and elegant boasting an alcohol content of 8% and utilizing a Bavarian style weizen yeast. It has just a touch of vanilla in the nose followed closely by subtle flavors of plum, raisin, ripe bananas and clove. Historically this style of liquid bread was produced by monks and sustained them through the long period of lent.
Funky Monk Ale

Centuries ago the Trappist Monks of Belgium and the Netherlands introduced this flavorful style of beer to the world and they have been brewing it ever since. By incorporating the finest European malts and authentic Begian yeast, we have created a dark malty brew. This Belgian Dubbel ale starts smooth with a heavenly finish – It’s a sin not to try it.

In celebration of our anniversary at the Carolina Brewery in Pittsboro we have brewed a special Vienna style lager. This beer is deep reddish brown in color and has a smooth easy drinking, roasted flavor. It finishes nicely with a light addition of German Hallertauer and Saaz hops. Though European in origin, this type of cool fermented beer became popular in Mexico when the Austrian brewmasters brought their lager brewing techniques and recipes to the America’s.

Our 19th Anniversary Ale is brewed in the style of the Trappist Monks of Europe. It is malty and refreshing with a light hop addition for minimum bitterness. By using traditional Belgian malts and yeast, this beer has its own unique aromatic qualities. Since much of its flavor is derived from the authentic yeast strain it is gently filtered to prevent the delicate flavors from being stripped away. As is the custom in Belgium and the Netherlands, a touch of dried orange, cumin and coriander is added to round out the flavor.

Our Black IPA has a little something for everyone. It looks and pours like a classic porter with pitch black color, hints of rich dark chocolate and a beautiful tan head. Breathe in the aroma and you will recognize that this smooth drinking ale is hopped with loads of Chinook and Comet hops. Finally, we add Cascade and Comet hops to this beer in the fermenter to impart that true-to-style American IPA aroma.

World renowned for its distinctive peppery aroma, the Saaz hop is the favorite variety for all pilsner style lagers. This deep golden hued Imperial Pilsner is packed full of Saaz hops and the finest German malts. We promise you that a small glass of this beer won’t be enough, so be sure to ask your server to “Super Saaz” it for you.
To Hell N’ Bock
ABV: 8% | IBU’S: 28 | HOPS: HALLERTAUER, SAAZ
Bock beer, though dark in color is actually a lager beer. The use of a lager yeast and a much cooler fermentation temperature (48 – 50 degrees F) is the main difference between this beer and an ale. This cooler fermentation results in a beer with less fruity flavor than an ale fermented at 65 – 68 degrees F. For that authentic bock profile, To Hell n’ Bock is crafted with lots of Munich malt. This grain has a toasty, bread -like aroma that imparts a delicious malty flavor to complement the fresh German hops.
Saison and On

This unfiltered Belgian farmhouse ale is one of Carolina Brewery’s newest Small Batch Beer offerings. Brewed in the traditional Belgian style, this beer gains many complex flavors through its high fermentation temperatures and unique yeast strain. Saison and On offers a subtle fruity flavor complemented by a dry finish accented with spicy Saaz hops.

The origins of Bock beer can be traced back over 600 years to the town of Einbeck, Germany. The great taste and aroma of fresh malt are the main flavor components of this style, but the hops though still in the background, also play an important role by not allowing the malt to completely dominate the palate. These deep golden colored lager beers were made to replace the darker winter brews and the name Maibock refers to the month of May when these spring-time beers make their debut.
West End Wheat

Our seasonal wheat beer is an ale with flavor like no other. Its unique banana and clove yeast characteristics make it the juicy fruit of beer. Technically speaking this beer is known as a hefeweizen – hefe is the German word for yeast and weizen means wheat. Visually the beer is somewhat hazy – this is the hefe, taste-wise it is light yet malty – this is the weizen. This mouth-watering brew is often served with a slice of lemon for a zesty summer cooler.
Circle City Wheat

Myth Perpetuator Double IPA

Our brewers work hard in a physically demanding job, but beer lovers like to say that we’re “Living the Dream”, a myth popularized in today’s craft beer culture. Our favorite way to make the myth a reality is by creating beer styles that we haven’t made before. Hence “Myth Perpetuator”, a super hoppy double IPA with a huge emphasis on west coast hop varieties.
LIVING THE DREAM
Franklin Street Lager
ABV: 5.1% | IBU’S: 30 | HOPS: HALLERTAUER & SAAZ
Our lager, made with an all malt recipe is a Bohemian – style pilsner beer. It contains gentle bitterness, soft maltiness and is hopped true to style with Czech Saaz hops. This clear golden beer style, which utilizes bottom-fermenting yeast, was developed in 1842 in the town of Pilsen at a time when all other beers were cloudy.
CONTINENTAL STYLE LAGER

This Tripel style ale is rich, malty and strong. It pours a beautiful deep golden color with a bright white collar of foam. Saaz hops add spicy pepper notes to the aroma and nicely balance the fruity esters produced by the unique Belgian yeast strain. This beer follows with a nice honey-like flavor on the palate and finishes with a smooth, gentle warming of the tongue.
BELGIAN STRONG ALE
Jumpin’ Bean Coffee Stout

We’ve teamed up with our long-time coffee roaster, Counter Culture Coffee to produce this rich, complex stout. By carefully blending the best locally roasted coffee with the world’s finest roasted malts; we’ve created a full flavored brew that will satisfy the most discriminating beer and coffee drinker alike. In this special brew we chose to use Organic Sumatra Gayo Mountain coffee which is smooth, sweet and low on acidity. This shade grown coffee also has nice hints of dry cocoa that complement the rich caramel malts in this beer.
LOCALLY ROASTED, LOCALLY BREWED
Old Familiar Barley Wine
ABV: 8.3% | IBU’S: 81 | HOPS: PACIFIC JADE
The Old Familiar is an authentic barley wine. It is made from malted barley like all of our beers, but with the strength and body approaching that of a wine. This full flavored ale is nicely balanced with Jade hops from New Zealand. We put plenty of these classic citrus flavored hops into the boil and then add even more after fermentation is complete.
COMPLEX AND ROBUST
Old North State Stout
ABV: 5.4% | IBU’S: 43 | HOPS: FUGGLE
Stout began as a porter style beer in London England and originally described a beer that was stronger and drier than the sweeter porters were. Old North State Stout is made with roasted, pale and caramel malts plus American and English hops. Together they combine to make a full flavored ale with notes of dark chocolate.
